I travel to Mexico each year to teach at Club de Golf Malinalco, just outside the small Mexican town with the same name.  Although it does not make this great list of Mexican and Caribbean golf courses, I rank it highly.  It is the “Augusta National of Mexico,” in my opinion, and the greens make Augusta look slow!  

It is not a resort, but if you are looking for a great golf experience without the nightlife, then this might just suit your needs.
